HOT DOG TUNA MUSHROOM

Bread Dough Ingredients:
KANTIL wheat flour 1000 gr
Instant yeast 20 gr
Bread improver 5 gr
Granulated sugar 250 gr
Milk powder 50 gr
Whole eggs 3 pieces
Egg yolks 2 pieces
Margarine 75 gr
Butter 75 gr
Salt 10 gr
Liquid milk 100 ml
Water 240 ml
Filling Ingredients :
Cooking oil (for sautéing) 6 tbsp
Onion, finely chopped 2 pieces
Garlic, finely chopped 4 cloves
DAHLIA wheat flour 4 tsp
Canned tuna 3 cans (140 gr each)
Champignon mushrooms, thinly sliced 1 can
Tomato sauce 8 tbsp
Chili sauce 2 tbsp
Salt 2½ tsp
Ground pepper 2 tsp
Chili powder 2 tsp
Sugar 1 tbsp
Water 400 ml
Beef burger patties 6 pieces
Blue cheese salad dressing 50 ml
Additional Toppings :
Mayonnaise, chili sauce, tomato sauce, thousand

island dressingLettuce, Tomatoes, sliced

How to make:

  1. Mix the KANTIL wheat flour with sugar, instant yeast, bread improver, and milk powder. Stir until evenly combined.
  2. Add water and eggs. Mix until all liquid is absorbed.
  3. Add margarine and mix well. Finally, add salt and knead until the dough is fully elastic and smooth.
  4. Shape the dough into a ball, cover with plastic, and let it rest for about 10 minutes.
  5. Divide the dough into 50-gram portions. Roll each into a ball and let rest for another 10 minutes.
  6. Shape as desired and fill according to the chosen form.
  7. Place the shaped dough onto a greased baking tray.
  8. Let the dough rise, covered with plastic, until it doubles in size (approx. 3½ – 4 hours).
  9. Brush the top with egg wash (a mix of egg yolk, a bit of water, and a pinch of salt).
  10. Bake in an oven preheated to ±200°C (392°F) for ±20 minutes or until golden brown. Let cool.
  11. Serving:Slice the bun lengthwise (but don’t cut all the way through).
  12. Spread thousand island dressing on the inside.Layer with lettuce, tomato slices, and the filling.
  13. Drizzle with mayonnaise, tomato sauce, and chili sauce.

Yields ±30 pieces.
