PILLOW BREAD

Ingredients :

1. KANTIL wheat flour 1000 g
2. Yeast 12 g
3. Granulated sugar 250 g
4. Milk powder 10 g
5. Margarine 150 g
6. Salt 8 g
7. Bread improver 5 g
8. Water 500 ml
9. Egg for brushing 1 pc
Filling :
– Assorted fruit jams (according to preference)
– Cheese
 
 

 

 

How to make:

  1. Bread dough: Mix all the dry ingredients except salt, and stir until well combined.
  2. Add water and knead until half smooth.While continuing to knead, add margarine and salt. Continue kneading until the dough is smooth and elastic.
  3. Shape the dough into a ball and let it rest for 10 minutes.
  4. Divide and weigh the dough into 30 g portions. Shape each into a ball. Repeat until all dough is used. Let rest for another 10 minutes.
  5. Take each portion, fill with jam or cheese (combine as desired), and place in a 24 x 24 x 6 cm baking pan, fitting 16 pieces per pan.Let the dough rise in a proofing box for approximately 3 hours until fully risen.
  6. Brush the top of the dough with beaten egg. Bake at 200°C for about 35 minutes or until golden brown.
  7. Remove from oven and let cool.

Yield: Makes 4 pans.
