Orange Chiffon Cake with Cheese Speckles

Ingredients :
MELATI wheat flour 200 grams
Fine granulated sugar (1) 100 grams
Salt 2 grams
Egg yolks 7 pcs
Egg whites 5 pcs
Baking powder 2 grams
Vegetable oil 100 ml
Liquid milk 50 ml
Fresh Siam orange juice 50 ml
Orange essence 1 tsp
Cream of tartar 2  grams
Orange food coloring 3 drops
Fine granulated sugar (2) 130 grams
Cheese, cut into ½ cm cubes 100 grams
Cocoa powder 200 grams
Topping: Buttercream

HOW TO MAKE  :

  1. Sift the MELATI flour together with baking powder, then mix with sugar (1) and salt until evenly combined.

  2. In another bowl, mix vegetable oil, egg yolks, milk, and orange juice until well combined. Add the flour mixture and stir until smooth.

  3. Whisk egg whites with sugar (2) and cream of tartar until white and fluffy.

  4. Fold the whipped egg whites into the egg yolk mixture (step 2) until evenly mixed.

  5. Add the cheese that has been mixed with cocoa powder. Stir gently, then pour the batter into a 26 cm chiffon pan.

  6. Bake in the oven at 180°C for approximately 50 minutes or until cooked through.

  7. Remove from the oven and immediately invert the pan. Let it cool completely, then remove the cake from the mold.

Yield: 20 slices.
